Heavenly Chicken

Here is another fantastic chicken recipe. A moist and delicious chicken coated with a sour cream/yogurt mixture and cookie crumbs. Quick and easy to prepare with just a few simple ingredients. Serve this heavenly chicken with just about anything for a simple but delicious weeknight meal that everyone around the table will ask for again and again!

This is the “Heavenly Chicken Recipe” that my mom made almost every Saturday for lunchtime, that all the family enjoyed. Since Saturday (Sabbath) is special for us, we make special lunch where the family and friends can gather together.

This Heavenly Chicken recipe makes flavorful baked chicken that tastes divine! Made with Ritz crackers and bakes in 30 minutes!

You know those family recipes that don’t really have names? This is one of them.

A friend served us this and we quickly fell in love and asked what it was.

“That one chicken with the Ritz crackers,” is what they always called it.

She gave me her recipe, which we made just a couple days later (hey, it is GOOD), and then I did a little googling and came across a few various names for this heavenly chicken recipe – Sour Cream Chicken, Ritz Cracker Chicken, and a few people calling it Heavenly Chicken.

We’re calling ours Heavenly Chicken because yeah. It really is heavenly. So moist and buttery with a delicious cracker crust coating the chicken breasts.

For this recipe, I use boneless, skinless chicken breasts. I sometimes use chicken thighs. Both are great! You can also use either or a combination of yogurt and/or sour cream, depending on your preference. For ease, I place the crackers in a large Ziploc and crush them with a rolling pin. You see, this recipe is as easy as pie! I also recommend using breadcrumbs or panko breadcrumbs if you have them for best results.

HOW MANY CALORIES IN A CHICKEN DRUMSTICK

One chicken drumstick without skin has approximately 76 calories. 172 calories per 3.5 ounces (100 grams). It’s 70% protein and 30% fat. One chicken drumstick with skin has approximately 112 calories.

SHOULD I BOIL DRUMSTICKS BEFORE BAKING

You can parboil but not boil. Parboiling means partially cooking the meat while using low heat… (But in this recipe, I didn’t use the Parboil technique. I baked the drumsticks in the oven from the beginning.

Bake a 4-oz. chicken breast at 350°F (177˚C) for 25 to 30 minutes. Use a meat thermometer to check that the internal temperature is 165˚F (74˚C).
What is the secret to juicy chicken?
To start, brine your chicken in a mixture of water and a few tablespoons of salt for about 20 to 30 minutes. This will boost the natural flavor and moisture of the chicken breasts and will leave you with a super tender piece of meat. This is the one step that will really ensure your chicken won’t be dry or tough
What should I soak my chicken in before frying?
Most Southern fried chicken recipes start with a bath in a seasoned marinade of some sort, whether it’s buttermilk, milk and eggs, or even pickle juice. Adding plenty of salt to this mixture can help your chicken stay moist. This works in the exact same manner as a brine.

  • Dredge in sour cream seasoned with garlic powder, salt and pepper. Roll around in crushed Ritz crackers. Put on baking sheet. Drizzle with melted butter. Bake 425 for 45 min.

Tips:

1. When cutting the chicken into pieces, make sure all pieces are of equal thickness. You can use a meat mallet and plastic wrap to make your chicken evenly thick. This will help them cook evenly.

2. If you are using a marinade, blot the chicken before you cook it. Otherwise, the marinade will only make the chicken soggy.

3. For best results, cook chicken on a preheated grill or pan.

4. Use a meat thermometer to check if the chicken is cooked through.

5. Let the chicken rest for a few minutes after cooking before carving. This will keep all the juices in!

6. You can use seasoned breadcrumbs instead of Ritz crackers if you don’t have them.

  • 8 oz  Sour Cream
  • 1.5 Sleeves Ritz Crackers
  • 4 Tbsp  Butter
