  • 2 large sweet onions
  • 1 cup mozzarella cheese, cut into small cubes

  • 1 cup breadcrumbs
  • 2 eggs

Instructions:

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • Cut the onions into thick rings, about 1/2 inch wide. Carefully separate the rings and set aside.
