Ingredients:
For the meatloaf:
1 Onion (Chopped)
1 tbsp. Olive Oil
½ cup Frozen Peas
¾ cup Breadcrumbs
3 tsp. Garlic (Minced)
1 ½ lb. Beef (Ground)
1 Large Egg
¼ cup Tomato Sauce
¼ cup Parsley (Chopped)
¼ cup BBQ Sauce
Salt And Pepper To Taste
For the potatoes:
1 ½ Lb. Potatoes Peeled And Cubed
¼ cup Heavy Whipping Cream
4 tbsp. Butter
Salt And Pepper To Taste
1 cup Cheddar Cheese (Shredded)
Instructions:
Step 1. Heat the oven to 400 degrees.
Step 2. In a skillet over medium heat, cook the onions and garlic in the oil until softened. Remove and let cool.
Step 3. Add the remaining ingredients for the meatloaf to a mixing bowl with the onions, and knead with your hands until well combined.
Step 4. Form the mixture into a loaf shape in a 9×13 baking dish. Bake for 30 minutes.
Step 5. While the meatloaf is baking, boil the potatoes until tender. Drain the water.
Step 6. Add in the butter and heavy whipping cream as well as salt and pepper to taste. Mash well.
Step 7. Spread the mashed potatoes on the meatloaf, and top with the cheese. Bake for an additional 20 minutes.
