Low-Carb Zucchini Lasagna

Ingredients:
- 4 medium zucchinis, thinly sliced lengthwise
- 1 pound ground turkey
- 1 onion, diced
- 3 cloves garlic, minced
- 1 24-ounce jar marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F.
- In a large skillet, heat olive oil over medium heat. Add the onion and garlic and cook until softened.
- Add the ground turkey and cook until browned. Drain any excess fat.
- Stir in the marinara sauce and simmer for 5 minutes.
- In a separate bowl, combine ricotta, Parmesan, and half of the mozzarella.
- In a 9×13 inch baking dish, layer zucchini slices, meat sauce, and cheese mixture.
- Repeat the layers until all ingredients are used, finishing with a layer of zucchini on top.
- Sprinkle the remaining mozzarella on top.
- Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
- Let it cool for 10 minutes before slicing and serving.
