Ingredients:

  • 4 medium zucchinis, thinly sliced lengthwise
  • 1 pound ground turkey
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 24-ounce jar marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  • Preheat the oven to 375°F.
  • In a large skillet, heat olive oil over medium heat. Add the onion and garlic and cook until softened.
  • Add the ground turkey and cook until browned. Drain any excess fat.
  • Stir in the marinara sauce and simmer for 5 minutes.
  • In a separate bowl, combine ricotta, Parmesan, and half of the mozzarella.
  • In a 9×13 inch baking dish, layer zucchini slices, meat sauce, and cheese mixture.
  • Repeat the layers until all ingredients are used, finishing with a layer of zucchini on top.
  • Sprinkle the remaining mozzarella on top.
  • Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  • Let it cool for 10 minutes before slicing and serving.
