Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) red enchilada sauce
- 1 can (4 oz) diced green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 can (14 oz) corn kernels, drained
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper, to taste
- 1 cup heavy cream
- 1 cup shredded cheese
- Fresh cilantro, for garnish
- Tortilla strips, for topping
Instructions:
- In a large pot, cook chicken breasts over medium heat until no longer pink. Remove from pot and shred.
- In the same pot, sauté onion and garlic until fragrant.
- Add enchilada sauce, diced green chilies, black beans, diced tomatoes, corn, chicken broth, cumin, chili powder, salt, and pepper. Stir to combine.
- Add shredded chicken back to the pot.
- Simmer soup for 20 minutes.
- Stir in heavy cream and shredded cheese until melted.
