Chicken Fajita Casserole
My family couldn’t get enough of this Chicken Fajita Casserole! I made it for a family dinner and it was a huge hit. Everyone was surprised by how delicious the flavors were and kept asking for seconds. It’s definitely a new favorite in our household!
Ingredients:
- 2 lbs chicken breast, sliced
- 1 onion, sliced
- 2 bell peppers, sliced
- 2 tbsp fajita seasoning
- 1 cup shredded cheddar cheese
- 1 cup salsa
- 1/4 cup sour cream
- 1/4 cup chopped cilantro
Instructions:
- Preheat the oven to 375°F and grease a baking dish.
- In a skillet, cook the chicken until no longer pink. Add in the onion, bell peppers, and fajita seasoning. Cook until vegetables are tender.
- Layer half of the chicken mixture in the baking dish, followed by half of the cheese. Repeat with the remaining chicken mixture and cheese.
- Bake for 20 minutes, or until cheese is melted and bubbly.
- Top with salsa, sour cream, and cilantro before serving.
