  • 1 cup strong brewed coffee
  • 1 cup shredded coconut

  • 1 cup granulated sugar
  • 3/4 cup unsalted butter
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F and grease and flour three 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. Cream together the butter and sugar until light and fluffy, then add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Gradually add dry ingredients to wet ingredients, alternating with buttermilk and coffee. Mix until just combined.
  5. Fold in the shredded coconut and chopped pecans. Divide batter among cake pans evenly.
