Southern style fried salmon patties: Hereβs a fish that even kids will love to eat. Simple, quick, easy to make, and even better between two slices of bread or in a bun. Add a little mayonnaise or make your own special sauce and youβll have dinner on the table in no time.
We didnβt eat a lot of salmon patties when I was growing up, but Iβve always enjoyed the taste. Of course, I love just about anything I can squeeze between two slices of sandwich bread. Iβm totally addicted to sandwiches of all kinds, always have been.
As an adult, Iβve learned to enjoy salmon in many different ways. I like it baked, pan-fried or, my favorite, smoked on the grill. The price of the fish is a bit steep, but I enjoy it whenever I can.
Whatβs really nice about these salmon patties is that they are quick and easy to make. I use canned salmon and ingredients that are staples in any kitchen. I try to keep a can or two in the kitchen cupboards at all times. Just mix everything together in a bowl and fry them in a pan. You can prepare the mixture and refrigerate it for several hours before cooking if necessary. This is a great main meat dish or a quick and easy sandwich, whichever you prefer. Ingredients:
1 β 12 oz can pink salmon
2 whole eggs
1/4 cup chopped onions
1/4 cup chopped peppers
2 tablespoons yellow cornmeal
1/2 teaspoon salt
1/2 teaspoon garlic powder
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
1 teaspoon Texas Peteβs hot sauce
1/2 teaspoon ground black pepper
1 slice of white bread, crumbled
1/4 cup flour, add slowly, if necessary, to adjust consistency.

Instructions:
Open the canned salmon and put it in a colander in the sink to drain.
Remove the large bones if you donβt want them. However, they are still edible.
Flake the salmon with a fork.
Place the flaked salmon in a large bowl.
Add two whole eggs.
Add chopped onions and peppers.
Add cornmeal
Add the salt
Add the garlic powder
Add the mayonnaise
Add Worcestershire sauce
Add Texas Peteβs Hot Sauce
Add ground black pepper
Crumble the slice of bread and put it in the bowl.
Gently mix the ingredients together, without overworking.
If the mixture is very wet, add flour if necessary to adjust the consistency.
Divide and form the mixture into four patties. Set aside.
Heat a skillet over medium heat and add shortening or oil for frying.
Place the patties in the pan and brown the bottom.
Gently turn the patties over and brown the other side.
When both sides are golden, remove from the pan and drain on paper towels.
Serve hot and enjoy!
