Prepare stuffed peppers ahead of time
Another perfect recipe for stuffed peppers to prepare in advance. In fact, I make them all the time on weekends and leave them in the fridge to cook a few days later. Super convenient!
Ingredients:
4 medium green peppers, halved
1.5 lb. ground beef, browned
1 package of taco seasoning mix, or look for a homemade taco seasoning recipe
3/4 cup of water
1-1/2 cups cheddar cheese
1 cup sour cream
1/2 cup salsa

Ingredients:
4 medium green peppers, halved
1.5 lb. ground beef, browned
1 package of taco seasoning mix, or look for a homemade taco seasoning recipe
3/4 cup of water
1-1/2 cups cheddar cheese
1 cup sour cream
1/2 cup salsa
Instructions:
Preheat the oven to 350° F. Wash the peppers, then cut them in half lengthwise through the middle and remove the seeds. Place them in a casserole with 1/4 cup of water. Cover and microwave for 7 to 10 minutes, or until peppers are tender. Check cooking periodically.
In the meantime, brown the ground beef until it is cooked through. Add taco seasoning and water and cook according to the recipe or package instructions. Once the meat is cooked, add the sour cream, salsa, and a cup of cheddar cheese.
Spray a 13 x 9 baking dish with non-stick spray. Place the cooked peppers inside the baking dish and stuff them generously with the meat and cheese mixture. Cover with the rest of the cheese. Bake in the oven at 350° F for 20-30 minutes until the peppers are hot and the cheese is melted. Serve with your favorite taco ingredients and a little salsa. Enjoy!
