Ingredients:

  • 1 package of refrigerated pie crusts
  • 2 cups cooked chicken, diced
  • 1 cup frozen mixed vegetables
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 3/4 cups chicken broth
  • 2/3 cup milk

Instructions:

  • Preheat oven to 425°F.
  • In a saucepan, melt butter over medium heat. Stir in flour, salt, and pepper until well blended.
  • Gradually whisk in chicken broth and milk. Cook and stir until the mixture comes to a boil and thickens.
  • Stir in chicken and mixed vegetables. Remove from heat.
  • Roll out one pie crust and place in the bottom of a pie dish. Pour in chicken mixture.
  • Roll out the second pie crust and place on top of the chicken mixture. Pinch the edges together and cut slits in the crust for ventilation.
  • Bake for 30-35 minutes or until crust is golden brown.
